Baked Cinnamon French Toast Casserole

Happy Friday! I have something special for you today ... I'm about to rock your world with a new recipe ;) There's a crumble topping involved so read on, hungry bloggers!

Last night, I wanted to have breakfast for dinner so I made a French Toast Casserole. I didn't have the ingredients for the one that I usually make so I took to the internet for a new recipe. I decided to try this recipe from the Pioneer Woman.

I had to alter it a bit so I don't know how spot on my version was, but the final result was amazing! Please note that I used an entire loaf of healthy wheat bread with flaxseed instead of white bread (it didn't taste wheaty once baked into the casserole), 1% milk instead of whole milk, light coconut milk instead of heavy whipping cream, and brown sugar instead of white sugar.

Since I found the recipe right before we started to cook, there wasn't time to let the mixture sit for hours in the fridge - no biggie! It came out perfect. 

The look on my boyfriend's face as he took his first bite was priceless! I don't think I've ever seen him react to food in such a dramatic way. He absolutely loved it!

When I make French Toast Casserole I tend to cut it into squares after it cools and wrap each piece in foil, then freeze them. 30-45 seconds in the microwave results in a super easy breakfast when you're in a rush. This casserole yields 12 perfectly portioned squares.
